Famous Recipes Made Healthy – TNN on DR. Oz!

Well, today is the day! This afternoon myself, along with 7 other awesome bloggers, will have our videos featured on the Dr. Oz show!

If you don’t follow me on Facebook, you may not know what I am talking about. Let me quickly help you play catch-up:

A week or so ago I was contacted by a producer of the Dr. Oz show asking me if I would be interested in submitting a video for a healthier version of Wisconsin’s Mac and Cheese. Turns out, bloggers from all over the country were being asked to submit healthier versions of their state’s famous meal. The top three finalists were being brought onto the show to have Dr. Oz himself taste their magnificent meal. Although I was not a finalist, I was excited to receive the news that my video will be one of the few shown on the show! Very exciting for a small-town Midwestern girl!

But today, I want to share with you the recipe I created for the show. It is a healthier version of hearty mac and cheese. A typical homemade mac and cheese recipe includes 2 to 3 cups of cheese, crazy right?! That is a ton of saturated fat! Instead, I substituted some of that cheese for avocado; which is actually a perfect substitution because it replaces some of the “bad fat” with “healthy fat” while retaining the creamy texture of the dish. I also created this dish to be gluten free so that it appeals to those who are gluten intolerant, and is just easier on the digestive system in general.

Chipotle Avocado Mac and Cheese

Prep time 20 minutes
Cook time 20 minutes
Total time 40 minutes
Dietary Gluten Free, Low Fat

  • 1 avocado
  • 1 cup 1% milk
  • 1 1/4 cup sharp cheddar cheese
  • 1/4 teaspoon chipotle seasoning
  • 1 bag brown rice noodles
  • 4 tablespoons parmesan cheese
  • 1 tablespoon extra virgin olive oil


1. Pre-heat oven to 350 degrees and start boiling water for noodles.
2. Peel and dice avocado and put in blender with 1/4 cup of milk. Blend until creamy.
3. In a saucepan, let olive oil heat up at medium heat. Once pan is hot, mix together the creamy avocado mixture, the remaining 3/4 cup of milk, 1 cup of the sharp cheddar cheese, and chipotle seasoning.
4. When pot of water is boiling, cook the pasta noodles for about 10 minutes, or until al dente.
5. Once cheese and avocado mixture is creamy and bubbling, mix it in with the pasta noodles (drained).
6. Place the noodles and sauce mixture into a greased 9x13 pan.
7. Top with the remaining 1/4 sharp cheddar cheese and 4 tbsp parmesan cheese.
8. Bake in oven at 350 degrees for 15 minutes
9. After 15 minutes, broil for 3 to 4 minutes to brown the top of the mac and cheese. Keep and eye on it at this stage as it burns very quickly.
10. Once you have reached your desired degree of crispiness, take out and enjoy!

      Ah! I’m so sorry! I’m actually in the process of changing the program I use to post my recipes on my blog right now. I didn’t think anyone would notice. :) All of my recipes are gone for a couple hours but I will make sure I reupload this one first! It should be back up in two hours at the most.
