My Secret Weapon for Lazy Cooking Nights!

You all know cooking is not my thing. Heck, I try to get away with the whole “popcorn is totally a dinner food” thing at least twice a week. But if you remember, last Friday I talked about how I was really excited to get back into a daily routine and wanted to start cooking more and trying to be more intentional about meal planning.
Well, I’m happy to report that the recipes have been all picked out, the groceries have been purchased, and I’m all set to start cooking at home this week! Nights around here are always pretty hectic, so Eric and I always enjoy being able to eat a good meal at home. But when the weekend rolls around, all bets are off! Saturday nights we typically like to go out for a meal together to get out of the house, but Sunday’s are generally a pretty lazy day for us. Once we get back home from church in the morning, we typically like to spend the rest of the day relaxing, and leisurely getting stuff done around the house. Sunday nights, the absolute last thing I want to do is cook a meal.
So when I discovered that one of our favorite restaurants is now selling some of their signature meals at the grocery store…well, let’s just say I was a little bit more than intrigued.
Eric and I ran out to our local Walmart Sunday afternoon to track these guys down. We did have to do a bit of searching, but once we found the Chili”s at Home meals I was pleasantly surprised! Our Walmart had probably about 15 different meals to choose from. Eric and I just stood and stared for a minute or two before we finally jumped into gear.
One Tip: Our Walmart had the Chili”s at Home frozen entrees in 3 different locations within the store. The individual meals were by the frozen-dinners-for-one, the big bags were near the family-sized meals, and some of Chili’s famous appetizers like their queso dip (to die for) was in the appetizers section.
After looking at every single meal option they had (twice), we decided on three different selections to try. We purchased the Chicken Bacon Ranch individual meal, the Cajun-style Chicken Alfredo family meal, and the Seasoned Chicken Bites with Honey Chipotle Sauce.
That night we made the Cajun-style Chicken Alfredo, and I was in heaven! This one was pretty spicy, so if you aren’t a big fan of spicy dishes, you may want to try their Bacon Mac ‘n’ Cheese or their Cheesy Chicken Pasta Florentine. Eric and I however loved it – We are big spicy food fans! This stuff made our entire kitchen smell mouth-watering, and in less than 10 minutes we had an amazing meal all ready to eat! In fact, I didn’t even get a chance to snap a picture of the finished produce for you because Eric ate all of it before I could even blink! I guess that means it’s husband-approved.
We had every intention of saving the buffalo wings for the next Packer game, but I’m a bit ashamed to say they didn’t even last the night. A few hours later we popped these babies into the oven for 20 minutes, covered them in the honey chipotle sauce, and completely devoured them. Hey, at least I managed to get a photo this time!
Today I had the Chili”s at Home Chicken Bacon Ranch individual meal for lunch. It was just as amazing at the first two! I have to say – I’m usually a little bit weird about frozen meats, especially chicken, which is why I tend to avoid frozen meals. The chicken in all 3 of these meals though was delicious! Extremely juicy and not chewy or rubbery at all!
These Chili”s at Home meals have definitely made me a frozen food fan! So full of flavor you would never guess they were frozen meals! They are just so nice to have on hand for those nights where you have a lot going on, or time gets away from you, and you have to whip up a complete dinner in just a few minutes. Eric and I are excited to purchase a few more very soon. Next on our list of meals to try? The Nacho Potatoes with Beef and Bacon, the Pepper Jack Mac ‘n’ Cheese, and a few of their famous appetizers!
