Recipe Swap with MarryMint! An Easy Family Favorite

Let’s face it: we all have that recipe or two that seems to find its way into our kitchen more times in a week than we’d like to admit. Sure, it may be delicious, but eating it for the 6th time in one month is not cute. I’ve been dealing with that a lot these past few months. When I found myself making some variation of a taco/burrito/quesadilla for what seemed like the 10th time in two weeks, I realized I needed to step out of my comfort (and apparently very mexican) cooking zone.

My lovely blogger friend Amanda @ MarryMint and I were talking the other day about how we both really needed to work on this whole trying-new-recipes thing. I think even our garbage disposal husbands were getting a little sick of our “go to” meals… We thought it would be really fun to swap one of our family’s favorite meals with each other and see how they turned out! Well, being bloggers, we couldn’t just make these recipes and not write about them – so today I’m going to share with you the delicious and super easy recipe Amanda shared with me!

Let’s just put it this way – when Eric asked what recipe I sent to their family in return, his immediate response was, “oohhh yea that one’s awesome!!” when I told him which recipe they were attempting. :)


So what recipe did Amanda’s family send us all the way from Alaska? Glad you asked.


This Cream of Mushroom + Banana Peppers Chicken and Rice was amazing! Best of all it was one of the simplest meals I have ever made (besides ordering a large thincrust with pepperoni and extra cheese). I was able to assemble this entire meal in about 20 minutes. It was very filling and had a great taste that landed somewhere between sweet and salty.

Confession: I’ve never actually eaten a banana pepper before, much less cooked with them – but I was pleasantly surprised! They tasted great mixed in with the chicken, cream of mushroom, and soy sauce, and cut the taste of all that salt really well.

Creamy Mushroom + Banana Pepper Chicken and Rice


  • 2-3 chicken breasts
  • 1 cup brown rice
  • 1 cup white rice
  • 2 cans cream of mushroom soup
  • 1/2 jar banana peppers
  • garlic salt
  • soy sauce
  • salt and pepper


1. Cook both types of rice together in a rice maker or on the stove
2. Cube chicken breasts and brown on stovetop
3. Cut up half the jar of banana peppers into slices
4. When the chicken is about halfway cooked, add the banana peppers and half the jar of the banana pepper "juice" to the chicken and mix together
5. Add garlic salt, salt, and pepper to taste
6. Once the chicken is fully cooked, add two cans of cream of mushroom soup and let simmer (you can add up to a half a can of water if the mixture seems too thick)
7. Combine the rice and chicken mixture and top with soy sauce~
